Coconut Rice

with desiccated coconut

For our final recipe in this series, we show you how to create a simple coconut rice. Coconut rice is a common Ganesh Chathurthi festival offering in South India. This easy recipe will be a great addition to your celebration spread.


Serves: 4 

Ingredients:


  • 500g basmati rice

  • 1 onion, finely chopped

  • 1/2tbsp sunflower oil

  • 400ml can coconut milk

  • 5tbsp desiccated coconut

  • Cashew nuts to decorate (optional)

Method

1. Heat a medium size saucepan and add the desiccated coconut. Toast for 2-3 minutes until golden brown, tossing the pan to ensure the coconut does not burn. Remove the coconut and set aside.

2. In a large saucepan with a lid, soften the onions in the oil over a low heat. Once the onion is soft, add the rice and stir for 5 minutes. Tip in the coconut milk along with 400ml of water, bring to a gentle simmer, stirring constantly. Once the rice is simmering, cover the saucepan with the lid and leave on the lowest heat for 10-15 minutes, scraping the bottom occasionally to stop the rice sticking. Stir in the desiccated coconut and cover with a lid for the rice to finish cooking in the residual steam.

3. Serve with some extra desiccated coconut sprinkled on top and cashew nuts if you like.
