Sticky Tamarind Chicken

INGREDIENTS

  • 2 Chicken leg quarters
  • 2 tablespoons of Olive Oil
  • ½ cup of onion, diced
  • ½ teaspoon of ginger, grated
  • ½ tablespoon of garlic, grated
  • ¼ cup of Heera Tamarind Paste
  • ¼ cup of honey
  • ¼ cup of orange juice
  • 2 tablespoons of soy sauce
  • 1 piece of lime (for zest and juice)
  • ¼ teaspoon of cayenne pepper
  • Salt & Pepper, to taste
  • Cilantro for garnish

PROCEDURE:

  1. Start by heating the oil in a small saucepan over low heat.
  2. Add the onion and sauté until it softens.
  3. Add the ginger and garlic.
  4. Add the Heera Tamarind Paste, orange juice, honey, soy sauce, lemon zest, lemon juice, and cayenne pepper. Keep stirring until the mixture boils.
  5. Reduce the sauce to a syrup-like concentrate in low heat. Turn off the heat.
  6. Prepare the chicken by cutting to the bone enough to let the marinade be absorbed later.
  7. Season the chicken with salt and pepper.
  8. Preheat the oven at 425°F. Brush the chicken with your tamarind paste concentrate on both sides. (Set aside)
  9. Roast in the oven for 30-40 minutes until the chickens are cooked all the way through.
  10. Transfer to a serving plate, drizzle with the tamarind paste concentrate, top with cilantro.
  11. Serve and enjoy!
