Baigan Bharta comes from the cold, northern regions of india. Roasted to enhance the exotic flavor, Ashoka Baigan Bharta is a delightfully traditional, mashed aubergine preparation with the pungent goodness of ginger and chillies. A refreshingly different, dry dish generally relished with jeera pilaf (cumin seed rice), naan breads or chapatis. Or, serve it as a side accompaniment to Indian meals.
