Indigenous to Guyana and the Amerindian people, Baron Cassareep is a thick black liquid made from the processing of cassava and is mixed with other spices.

It is often used as a base to add exotic Caribbean flavour to gravies, stews, broths and sauces, especially pepperpot. It is made of caramelised sugar, cassava extract, hot peppers, clove and citric acid.
