A staple ingredient within North African cuisine, these small, fine-skinned preserved lemons bring a subtle yet distinctive citrus flavour and aroma to a wide variety of dishes. Beldi lemons are preserved whole in a simple brine or water and salt. During the preserving process the lemons lose their sharpness but their flavour intensifies.

An essential ingredient in Middle Eastern tagines, preserved lemons can also be cut in half and roasted with potatoes, meat, vegetables or used in stuffing for poultry or fish. They can also be used in salads or mixed with yogurt to produce a zingy tahini.
