Garden egg is a type of aubergine that’s indigenous to sub-Saharan Africa. Smaller than standard aubergines and packing a pleasantly bitter flavour, garden eggs have a spongy texture and are an excellent meat alternative due to their cost and their ability to soak up other flavours so well.

Incredibly popular in Ghana and Nigeria, garden eggs are a versatile source of fibre and potassium to add into a traditional African stew, but can even be eaten raw.
