Sushi Chef Sushi Vinegar is a specially seasoned rice vinegar that is centuries old, by brewing in a slow and natural process. When mixed with warm rice, it adds the characteristic sheen and delicate, sweet yet tangy flavour to the sushi rice.

For making sushi, use ⅓ cup of sushi vinegar with 3 cups of warm cooked Japanese-style sushi rice (approx. 1 cup of raw rice). After the rice is cooked, let the steam escape by tossing the rice with a paddle. Then, spread it on a wooden, ceramic, or plastic surface - let the rice cool down. Once cool, sprinkle it with sushi vinegar and toss the rice.
