Ingredients:

  • 300g colocasia leaves (Aaloo chi Patal)
  • 3 medium-sized potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2-3 green chilies, chopped
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • Oil for cooking
  • Fresh coriander leaves for garnish

 

Instructions:

  1. Clean and wash the colocasia leaves thoroughly. Chop them finely.
  2. Heat oil in a pan and add mustard seeds and cumin seeds. Allow them to splutter.
  3. Add chopped onions and green chilies. Saute until onions become golden brown.
  4. Add chopped tomatoes and cook until they become soft.
  5. Add turmeric powder, red chili powder, and salt. Mix well.
  6. Add diced potatoes and chopped colocasia leaves. Mix everything together.
  7. Cover the pan and let it cook on low heat until potatoes are tender.
  8. Stir occasionally to prevent sticking to the bottom of the pan.
  9. Once the potatoes are cooked, garnish with fresh coriander leaves.
