Okra, (also known as ladies’ fingers or bhindi), is a flowering plant with possible South Asian origin. It is most highly valued for its edible green seed pods. Despite being low-calorie, Okra is extremely high in fibre and packed full of nutrients. It also has a rich content of vitamins and minerals, (including vitamins A, B, C, E and K, calcium, magnesium, iron, zinc, and potassium), which improve digestion, boost the immune system, aid the heart, protect eyes and reduce the appearance of acne, wrinkles and even scars.
Use the seed pods in soups, side dishes, as a pickled vegetable, or simply extract the oil.
